It’s so easy funnyonion. I cut up one carrot, one parsnip and one red onion per person, bite size pieces, them I used a pre chopped 350g bag of butternut squash and sweet potatoes but you could use one or the other, or something like celeriac, whatever you fancy, or potatoes if there are people in the family who insist 😃 For four of us I used two tbsp oil and just mixed it all together with salt and pepper and I sprinkled with dried thyme. Then put the sausages on the tray and the whole thing goes into a hot oven (200C fan) for about 45 mins. Give it a bit of a stir up and turn the sausages over half way.
