Spinach breakfast muffins cooking in the oven. I used 4 eggs beaten plus seasoning, a teaspoon of parmesan and some spinach to fill 8 muffin cases, so a portion of 2 muffins is tasty and low cal (on 800 cals a day at the moment). They can be microwaved the next day.
