Baked sliced sweet potatoe lightly rubbed in evoo and sprinkled with salt and pepper. Mashed avacado with juice of lime, purple onion, and jalapeno diced. Topped with sliced cherry tomatoes. Delicious!!!

Thanks binky, tatauu, and jcmama! Was my first attempt at this and will definitely make them again!! Thinking breakfast version next time with Greek yogurt and fruit!!
