Chicken & Bacon Veggie Soup
A low carb soup with the deliciousness of chicken and bacon.
Ingredients
Directions
- Place water onto boil. Add in any seasonings you desire.
- Chop up all vegetables and add to pot. Allow to come to boil then turn down to simmer.
- Fry bacon to crisp. Set aside to cool.
- Chop chicken into cubes. Fry chicken until crisp and set aside. Crunch bacon into pieces.
- Add chicken and bacon to pot. Simmer for 20 minutes.
- Add in chicken broth and cream. Simmer for 20 minutes.
- Serve in bowls and top with cream cheese and Mexican cheese.

I think I might whirl up all the cooked veggies in the blender (or food processor, If I had one *sigh*) and then add the cream and the chicken/broth and the cheese and the bacon--holy cats this sounds good!
