Update on my Chia Seeds experimenting

I used 250ml of water only with 25g of Chia Seeds and left to soak overnight. I previously used 200ml Fresh Milk + 50ml water. This morning I had a look at the Chia Seeds and they seem to have absorbed the water and created a gel like substance that was a little thicker than with the milk. The seeds didn't look as swollen as it did with the milk so I'm not sure if this is because perhaps the milk adds a white color to observe the seeds better with whilst the water doesn't so I see just the chia seeds and its colorless gel.

I decided to add another 100ml of water, give it a mix and put back in the fridge to soak for the rest of the day because I want to see if they will absorb more water and get bigger in size. I will consume them about 8pm.

It doesn't really make a difference on what consistency they are as they will still offer the same nutrition even if I don't soak them at all. Soaking with water will eliminate the extra calories that you get when soaking with milk.

So last night I used 400ml water with 25g Chia Seeds. It was much more liquid this morning compared to yesterday morning's batch that was soaked with 250ml water so I guess my sweet spot will be 250ml to 300ml water per 25g Chia Seeds depending on how gelatinous I want the consistency. Last night I had my Chia Seeds with canned Peaches and ice cream again. I'll switch to healthier recipes soon using fresh fruit and yoghurt in stead of ice cream.
