This last week I've been including potato salad into my non-fast day even on a Low Carb day.

I am attempting to benefit from Resistant Starch by boiling the potatoes then leaving them to cool down in the fridge overnight before eating them. This cooked then cooled for many hours method allows the potatoes to create more Resistant Starch in them and that can contribute towards weight loss.

Google it and read up if you haven't done so after my previous mention about it on my journal.

You can also do this with pasta. I'll be interested to know if anyone else is doing this and if it has helped their progress. The science behind it seems really awesome.

Oh man... I can't wait for your results!!! If it works I'll be first in line to follow you on that track, because I eat waaaayyyyy too little potatoes!!!! And they are my most favorite, next to pasta!!!

I think it works because I didn't expect such a big drop this week without going to gym. From the various test groups that were used, the results showed weight loss so I decided I might as well just incorporate it into my eating and if it works then it contributes and if it doesn't work, I'll gain but I haven't gained. Apparently it also works in rice, pasta, etc. but potatoes contains and can create alot more resistant starch than others. Next best thing to potatoes is green bananas. Being South African Indian, we always cook green bananas as a curry so I had some of that too last week and I record it in my Food diary as "Plantain" because they almost the same. I'll ask my mom for the recipe and post it on my journal.

Adding a spoonful of coconut oil to rice when cooking it (before cooling it overnight) can increase the resistant starch levels and reduce the calories in the rice by at least 10% (up to 60% depending on the rice used). I've been doing it (mostly potatoes), but I'm doing a lean weight gain, so can't really comment on weight loss efficacy.

I am so going to try that coz at the moment I dont eat any potatoes, rice or pasta.
