Happy 1st of November, everyone. Only 2 months until the year is over! It's crazy how time flies.

Not much to report today, because same old, same old. Food looks a lot, but it was pretty much just veg and some eggs. Also had my protein pancakes with strawberry sauce. Really good! I got my hands on some cashew milk (made hot chocolate with it), and I must say that I think I prefer the almond milk. But it's good to try new things.

Anyway, I feel I need to change up my workout routine this month, because what I used to do doesn't seem as intense anymore. I've got to keep things interesting. Still want to do more calisthenics workouts with a bit of HIIT, because it's done wonders for me, but just kick it up a notch. Any suggestions?

Also, it's almost weekend! Yay!

Those pancakes look mouth watering-ly good! I’ve heard about protein pancakes and would like to give them a try sometime. For my version of pancakes I normally mash a banana and add an egg, it helps curb the sweet cravings😂

I'm still perfecting the recipe but it's basically like this for 1 serving (about 4 average pancakes): 1/2 a large banana 1/2 Tbsp peanut butter 1 flax egg (which is 1 tbsp flax meal mixed with 3 tbsp water/milk) OR 1 large egg 1/4 tsp vanilla 1/4 tsp apple cider vinegar (for rise) 1/4 tsp cinnamon (optional) 1/4 to 1/2 tsp baking powder A pinch of salt 1 scoop protein powder (I use unflavoured pure Whey protein) Milk as needed (about 1/4 cup)

Mix dry ingredients a set aside. In a seperate bowl, add banana (mashed with a fork preferably), peanut butter, vinegar, and egg/flax egg and mix until you get a thick, gooey consistency. Add dry ingredients to banana mixture and gently mix until fully combined. Add milk if needed until until you get a pretty thick batter. Let sit for about 10 minutes Add about 2 and 1/2 Tbsp batter to skillet on medium to medium high heat. Flip when bubbles form on top if pancake and edges get a bit dry. Cook on other side for a minute or until golden. Stack and enjoy with whatever you want. Don't overcook the pancakes as they will become very dry. You can try subbing in normal flour or a nut flour if you don't have protein. You can add extra sweetener to your taste, as the pancakes are not that sweet.

EXTRA NOTES: I'm just estimating honestly, so this may not be accurate. So sorry 1 scoop protein for me is about 25g, but may differ with different protein powders. Don't overcook the pancakes as they will become very dry. You can try subbing in normal flour or a nut flour if you don't have protein. You can add extra sweetener to your taste, as the pancakes are not that sweet. Sorry for the spam
