Lemon Butter Chicken
Delicious oven baked chicken in lemon butter sauce.
Ingredients
Directions
- Preheat oven to 200c.
- Season chicken thighs with paprika, salt and pepper to taste.
- Sear chicken in 2 tbsp of butter skin side down first, for 2-3 min aside in an oven proof pan.
- Chop up the baby spinach.
- Melt remaining butter, add garlic and cook for 1 min.
- Add chicken broth, stir in cream, parmesan cheese, lemon juice and thyme.
- Bring to boil to reduce, lower the heat add spinach and cook for 3-5 min.
- Place chicken in pan and Place in oven for 25-30 min.
